Time for another BBQ with something different. A bit of a fusion dish with jerk chicken, BBQ pineapple, lime Mayo and guacamole, all together on a ciabatta. It was absolutely delicious and definitely scored a great big 10 from me! The flavours worked so well together with the spiciness of the jerk chicken and the zing from the guacamole and lime Mayo. Well worth giving this recipe a go. You will not be disappointed!!!
Jerk Seasoning Ingredients
1 Tablespoon Garlic Powder
1 Tablespoon Cayenne Pepper
2 Teaspoon Red Pepper Flakes
1 Tablespoon Onion Powder
2 Teaspoon Ground Allspice
1 Teaspoon Black Pepper
2 Teaspoon Dried Thyme
3 Tablespoon Brown Sugar
1 Tablespoon Salt
2 Teaspoon Paprika or Smoked Paprika
1/2 Teaspoon Ground Nutmeg
1/2 Teaspoon Cinnamon Powder
1 Tablespoon Ground Ginger
1 Tablespoon Dried Parsley
Rest of Ingredients
Chicken breasts (1 tablespoon of Jerk seasoning for each breast used)
Pineapple
3 Avocados
3 Limes
2 Chillies
1 Tomato
1 Onion
Coriander (hand full)
