This is my take on a recipe from Steven Richlien’s Project Smoke. Smoking chicken with sugar cane rocks! The cane makes a sweet light smoke flavor! The rum marinade is just right! Here is a recipe for the marinade:
2 cups of rum
2 onions sliced thin
1 jalapeno pepper sliced
6 cloves of garlic smashed
some extra virgin olive oil
a handful of allspice berries
Sugar cane for smoke
Marinade the chicken overnight and grill the next day on top of split sugar cane. Place some whole pieces in with the fire!
