With cannabis legalized in Thailand (for now) I took the chance to cook up Thai Holy Basil with Chicken (pad gra prao gai). Using cannabis as the special ingredient. I’ll also show you how to make a classic Thai omelette and of course its got cannabis in it too!
Of course if you can’t easily access cannabis leaves. Or don’t want to use cannabis this is still a terrific classic Thai stir fry recipe to follow at home.

PAD GRA PRAO INGREDIENTS:
200g (7oz.) Boneless Skinless Chicken Thighs
1 Cup Thai Holy Basil (can substitute with Italian Basil)
1/4 Thai Garlic
4 – 6 Thai Chilis
8 Cannabis Leaf (optional)
Sauce:
1 Tablespoon Oyster Sauce
1 Tablespoon Light Soy Sauce
1 Teaspoon Dark Soy Sauce
1 Teaspoon Fish Sauce
1 Teaspoon Sugar
2 Tablespoons Water
THAI OMELETTE INGREDIENTS:
3 Large Eggs
1 Tablespoon Oyster Sauce
2 small shallots minced
10 Small Cannabis Leaf (yes this is optional)
RECIPE:
Cut chicken thighs into small bit sized chunks and set aside. Pick out Thai basil leaves, the stem are edible too. Pick off cannabis leaves only and add to bowl with Thai basil.
Rough chop the chilies and place in mortar with Thai garlic. Thai garlic skins are completely edible. Bash and grind until mixture resembles chunky salsa. And set aside. Add all sauce ingredients into small mixing bowl and set aside.
Crack 3 large eggs into mixing bowl then add 1 tablespoon oyster sauce. Chop up cannabis leaf and shallots then add to eggs and beat until you don’t see egg whites.
Start off by cooking omelette on a frying pan. Add enough oil to cover bottom of pan on medium heat. When the oil starts to smoke and you hear tiny popping noises add omelette mixture. Cook until bottom side starts to brown. Flip and repeat other side until it browns also. Remove omelette from pan try to leave most of the oil behind.
Heat a wok on medium high heat. When wok starts to smoke add 2 tablespoons of oil. Spread oil around then add chili garlic mix. Making sure to mix and stir around so it won’t burn. This should only take about 10 seconds. Add chicken and keep stirring until chicken is almost cooked. Then add sauce mixture, stir for 10 seconds then add Thai basil and cannabis. Mix all ingredients for about 10 seconds then turn off the heat.
Enjoy both with a hot bowl of Jasmine rice, you’ve earned it!
