Smokey ribs, with a sweet and tart glaze! We start with trimming the ribs to square them off. Then seasoned with a simple 50/50 Salt and Pepper rub. Feel free to use whatever rub you like. Smoke the ribs at 250° for about 4-5 hours until they get the color you like. Don’t forget to spray the ribs with a simple syrup every hour to keep from drying out. Then I wrap in foil with 1/2-1 stick of butter meat side down. After 1-1.5 hours check to see how flexible they are. Once they bend freely it’s time to unwrap and set back on the smoker. I bump the temp up to 275° to help dry out the surface. Now brush with the raspberry glaze and let tack up about another 20-30 minutes. Now they are done let them cool for a few minutes before slicing.
Raspberry Glaze
350g of raspberries
1 cup of Rosé
1/2cup of sugar
Add all ingredients to a wide pan and stir until broken down. Now keep simmering until the sauce thickens and coats the back of a spoon.
Now strain in to another sauce pan and sit on low heat to keep warm
More complex rub
1/2 cup salt
1/2 cup pepper
1/2 cup brown sugar
1/4 cup smoked paprika
