In this video I smoke a pork butt and make Pulled Pork
9 lb Pork Butt (or Shoulder)
Rub Recipe
Combine the following:
3 TBS Brown Sugar
1.5 TBS Black Pepper
1 TBS Garlic Powder
1 TBS Paprika
1/2 TBS Onion Powder
(Salt Pork Butt separately to control the amount of salt… If injecting, no salt because injection juice has salt.
Injection Juice
1 cup Apple Juice
1 cup Water
½ cup Brown Sugar
¼ cup Salt
1 TBS soy Sauce
1 TBS Worcester Sauce
Inject into Pork Butt (use ½ to ¾ of the solution)
Coat Pork Butt with Rub Recipe. Let sit in the Refrigerator overnight. (Make sure you put the Pork Butt on a large enough sheet to hold the juices that will leak out.)
Put Pork Butt in Smoker at 250 F, Fat side down.
Spritz every hour with Apple Cider Vinegar and Water (50/50). Do not spritz the fat side.
Let pork get up to 170 F. (Probably 6 or 7 hours)
Put in Aluminum Pan and cover. (Pan will collect the juices)
Put in 260°F oven.
Let Pork get up to 205F. (Probably 1.5 to 2 hours)
Take out of oven and cover with several thick towels to let Rest for at least 1 hour. (2 is probably better)
Pull pork with forks. Mix back with some of the juices.
