►Ingredients for the KFC Chicken Bites
►Chicken Prep
3 large chicken breasts (1.3kg or 2.8lbs)
1/4 cup hot sauce (Tabasco)
2 tsp salt
►For the Sweet Chili
1/2 cup water
1/2 cup sugar
1/4 cup white vinegar
1 tbsp red chili flakes
2 red chilies finely chopped without seeds
2 – 3 garlic cloves finely chopped
2 tsp paprika
1 tsp salt
2 tsp light soy sauce
1/2 tbsp cornstarch mixed with 3 tbsp water
►For the BBQ
1/2 cup molasses sugar
1 tbsp brown sugar
1 cup ketchup
2 tsp yellow mustard
3 tbsp white vinegar
1 tbsp worcestershire
1.5 tbsp light soy sauce
1 tsp chipotle paste
2 tsp garlic powder
1 tsp onion powder
1 – 2 tsp birds eye chili powder
1 tsp paprika
1 tsp black pepper
Pinch of salt
►For the Nashville Hot
2 tbsp cayenne pepper
1 tbsp smoked paprika
2 tsp garlic powder
1 tsp onion powder
1 tsp black pepper
2 tsp salt
1/2 tsp msg
1 tbsp dark brown sugar
1/3 cup hot oil from leftover fried chicken
►For the Dredge
3 cups (300g) plain flour
2 tsp black pepper
1 tsp white pepper
1.5 tsp celery powder
1 tsp mustard
2 tsp garlic powder
1 tsp ginger powder
2 tsp smoked paprika
2 tsp onion powder
2 tsp thyme
2 tsp oregano
1 tsp basil
2 tsp salt
►For the Wet Batter
2 large eggs
1 cup (300g) plain flour
1 cup water
1/2 tsp salt
1/2 black pepper
Also, 1 cup flour in another bowl

►For Frying
1 litre oil

250g macaroni pasta
1 tsp salt for boiling water
1.5 cups or 375 ml evaporated milk
1 cup or 236ml double/heavy cream
1 tsp garlic powder
2 tsp smoked paprika
1.5 tsp white pepper
2 tsp black pepper
1 tsp onion powder
2 tsp cayenne pepper
1 tsp salt or to taste
2 tsp yellow mustard
2 tsp tabasco
2 cups extra mature cheddar
1 cup mozzarella
1 cup red leicester
