HONEY MUSTARD GAMMON
AD | My memories of first enjoying a really well made gammon joint was in Fort William for New Year with Jonathan’s family. His Aunt Alison is an awesome cook, and she’d made a huge ham for everyone to enjoy. It sticks in my mind as a core food memory 😍
This is a simple glaze that packs enough flavour due to the aromats used in the cooking liquid and slow cooking it means you can just pop it all in and leave it to do it’s thiiiiing!

Ingredients
2kg unsmoked gammon joint
1 can of cider (approx 440ml)
1 cinnamon stick
2 star anise
5 cardamom pods (slightly crushed)
5 cloves
1 tsp black peppercorns
2 tbsp wholegrain mustard
2 tbsp local honey
Method
1. Add gammon joint, cider and aromats (cinnamon, star anise, cardamom, cloves, black pepper) to slow cooker – cook on low for 4-6 hours
2. Just before you remove the gammon from slow cooker, pre-heat oven to 180C
3. Mix together honey & mustard
4. Take gammon joint out of slow cooker (discard liquid), remove netting/paper and skin if it has any
5. In a criss-cross pattern, cut lines in the fat on top of the gammon joint before pouring over and brushing in the honey mustard glaze
6. Bake gammon joint in the oven for approx 30 minutes or until crispy & sticky
7. Slice up & enjoy!
