I am making BBQ’d chicken skewers with a mystery ❓ ingredient to keep the chicken juicy and flavorful.
*Grilled Chicken Skewers Recipe*
🛒Ingredients
2.5 lbs of boneless, skinless chicken thighs cut into 1 inch cubes
4 strips of bacon
1 tsp of Turbinado cane sugar (also known as sugar in the raw)
2 tbs of paprika
2 tsp of smoked paprika
2 tsp of kosher salt
4 –12 inch metal skewers
*BBQ Sauce Recipe*
🛒Ingredients
1/2 cup of ketchup
1/4 cup of molasses
3 tbs of grated white onion (use large holes on box grater)
2 tbs of Worcestershire sauce
2 tbs of dijon mustard
2 tbs of apple cider vinegar
1 tbs of light brown sugar
Reserve 1/2 cup of sauce for dipping.
♨Instructions
1. Mix all sauce ingredients together and bring to a boil, then lower heat and simmer until sauce is thick.
2. Slice chicken thighs into small 1 inch cubes.
3. Slice bacon into 1/2 inch pieces. Mix for 30-40 secs in the food processor on medium speed until a paste forms.
4. Mix dry ingredients together in a bowl.
5. Add chicken and bacon to dry mixture and make sure chicken is fully coated.
6. Put in refrigerator for 1 hour or freezer for 30 mins.
7. Thread chicken onto metal skewers, about 6-8 pieces per skewer.
8. Prepare grill by lighting full chimney starter of charcoal and moving lit coals into 1 half for 2 zone grilling.
9. Add chicken skewers to direct side of grill and cook for 5-6 mins turning every 1-2 mins until char forms.
10. Move to indirect side and grill until chicken reaches temperature of 175-185F.
11. Brush on BBQ sauce during last 2 mins of grilling.
