Let’s roll a J, listen to some chill beats, and cook some dinner.
Tonight we’re making one of the four classic Roman pasta dishes, Cacio e Pepe. This dish is very simple, with just four main ingredients: pasta, pecorino romano cheese, freshly ground black pepper, and a healthy splash of pasta water. You’ll see some recipes call for a fat like oil or butter. These can help with emulsifying the sauce and add a little to the back end of the flavor, but traditionally the dish is made just as the name states, with Cheese and Pepper (Cacio e Pepe).
Tonight’s meal is “inspired” by Cresco Caped Crusader.
