Ingredients
Dry Rub:
50g brown sugar
20g paprika
10g garlic
10g pepper
5g onion
2.5g cayenne
2.5g ginger
5g powdered smoke
1g smoked salt per 100g of meat
BBQ Sauce
1 cup ketchup
¼ cup apple cider vinegar
1 tbsp worcestershire
1 tsp chili powder
1 tsp ground cumin
½ tsp ground ginger
1 tsp black pepper
2 ½ tbsp brown sugar
Directions
1. Mix all the rub ingredients together and season the chicken with the smoked salt. Apply the rub all over.
2. Heat oven to 250F and cook for 2 hours.
3. After 2 hours, remove from heat and use the drippings to brush the skin. Let chicken cool for 15 mins
4. Roast at 450F for 10 mins to crisp the skin
