To get started…
1/2 medium onion, diced small
3 cloves garlic, diced
1 tbsp olive oil
Simmer ingredients for about 10 minutes in a pot on the stove on medium heat, stirring regularly, until translucent.
1 tsp chili powder, ground
1/2 tsp cumin, ground
1/2 tsp oregano, dried
1 tbsp brown sugar
½ tsp salt
1/4 tsp pepper, brown
Add all seasonings to onions and garlic and stir for 30 seconds on medium-low heat.
28 oz tomato sauce (plain, from a can)
1.5 cups chicken stock
Add tomato sauce and chicken stock. Simmer for 15-20 minutes on medium low. Cool and blend smooth if desired.
To make enchiladas, sautéed onions and peppers. Assemble and bake them in the oven / smoke them on the Traeger pellet grill / or air fry them until the cheese is nice and bubbly.
