Sweet Bourbon Glazed Pork Spare Ribs | Smoke Sessions

Ingredients:
For the pork ribs:
2 – 4 racks of pork spare ribs
Your favorite pork rub (commercial or homemade) We use Philips Barbeque Co Slab Father
For the bourbon glaze:
1/2 cup bourbon whiskey
1/2 cup ketchup
1/4 cup apple cider vinegar
1/4 cup brown sugar
2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
Instructions:
Preparing the pork ribs:
1. Remove the membrane:- On the backside of the ribs, locate the thin, shiny membrane covering the bone. Use a butterknife or your fingers to loosen and lift one corner of the membrane.- Once you’ve lifted a small portion, grip the membrane with a paper towel and pull it off the ribs. This step allows better flavor penetration and tenderizes the ribs
2. Apply the pork rub:- Season both sides of the ribs generously with your favorite pork rub. Ensure an even coating, gently patting the rub into the meat for better adherence.- You can let the ribs sit in the fridge with the rub for 1-2 hours (or overnight) to enhance the flavors, but this step is optional.
Preparing the bourbon glaze:
3. In a saucepan, combine the bourbon whiskey, ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, Dijon mustard, garlic powder, and onion powder.
4. Bring the mixture to a simmer over medium heat, stirring to combine the ingredients.
5. Let the glaze simmer for about 10-15 minutes until it thickens and develops a rich flavor.Season with salt and pepper to taste.
Smoking the pork ribs on the Masterbuilt Gravity Series 1050:
6. Preheat your Masterbuilt Gravity Series 1050 smoker to a temperature of 260 degreesFahrenheit using your preferred fuel source
7. Once the smoker is ready, place the seasoned pork ribs on the grates, bone-side down.
8. Close the lid and smoke the ribs at 260 degrees Fahrenheit for about 3 to 3.5 hours, or until the internal temperature reaches 195-203 degrees Fahrenheit (90-95 degrees Celsius).
Applying the bourbon glaze:
9. During the last 30-45 minutes of cooking, brush the bourbon glaze generously onto both sides of the ribs. Apply multiple layers for a rich, sticky glaze.
10. Continue smoking until the glaze caramelizes and forms a beautiful bark on the ribs.
11. Once the ribs are fully cooked and the glaze has set, remove them from the smoker and let them rest for a few minutes.
