Recipe:
8 strips of bacon
2lbs pork loin/shoulder/roast
1 tsp garlic powder
1 tsp onion powder
1/4 tsp cayenne powder
1 tsp paprika
1/2 tsp cumin
1 cup brown sugar
1/3 cup apple cider vinegar
1/2 cup bourbon
1 cup sweet bbq sauce
Cook the bacon, set aside.
Put pork into slow cooker.
In medium bowl, mix garlic and onion powder, cayenne, paprika, cumin, brown sugar, apple cider vinegar, bourbon and bbq sauce together.
Pour over pork roast.
Add bacon on top of pork.
Cover. Cook on low 5-7 hours or on high 3-4 hours.
Pull out pork roast, set on plate, use forks to shred. Store in container. Pour bit of the juice over top.
Add cooked pulled pork to sandwich buns. Top with pickled onions or condiments of choice. Optional to add more bbq sauce.
