Refrigerator Pickles
Several cloves of garlic, black peppercorns, mustard seeds, sliced cucumbers, & pickling brine made from the video Preserving the Harvest Pt. 1
Outlaw Candy & Cowboy Candy
3-4C Serrano Peppers (Outlaw Candy)
3-4C Jalapeño Peppers (Cowboy Candy)
4C white vinegar
4C white sugar & 4C brown sugar
2t garlic powder & turmeric
1t cayenne (optional)
Bring to a boil on the stove add in peppers and reduce to simmer for 4-6 minutes. Transfer to canning jar with slotted spot and pour syrup over top.
Creamy Serrano Pepper Sauce
5 cups diced Serrano peppers
1 1/2C chopped onions
3-4T chopped garlic
2t salt
1C water
A bunch of fresh or dehydrated cilantro
2t white vinegar
1 1/2C of your favorite oil
1/4C honey
Heat chopped onions, garlic, salt, cilantro, and Serrano peppers in large pot with 1 cup water for 15-20 at a simmer. Let cool slightly transfer to food processor and blend. Add vinegar, oil and honey to processor and mix well. Enjoy.
Habanero Peach Jelly
4-5LBS peaches
1C Peach Juice
4 Red Habaneros 4 Green Habaneros
6 Tablespoons fruit pectin
5-6C white sugar
Blend peaches and peppers and transfer to large pot. Bring to a boil, add in sugar. Add pectin and boil till its a thick mess that sticks to your spoon. Transfer to canning jars.
