What’s good y’all! You guys are really going to enjoy this dish! Carrot fluff! Which is a healthy take on candied yams and not going to lie it tastes amazing. Great texture and flavors you won’t even be able to tell the difference! Carrots have way better nutritional value than yams so it’s great for those trying to stay healthy and children love it!!
Ingredients:
1 Bag Whole Organic Carrots
3/4 Can Sweet Condensed Milk
2 cups Light Brown Sugar
1 tablespoon Nutmeg
2 tablespoons Cinnamon
1 tablespoon Vanilla Extract
1 egg
Half a stick of butter
Dash of salt
First peel your carrots. Peeling your carrots is key for a nice smooth texture. Then cut your carrots into about 1 inch pieces. Boil your water while you are prepping your carrots so when you’re done your water should be boiling. Add the carrots and let them boil until they are fork tender. Strain your carrots and then add them to a large bowl. Add all your ingredients in no particular order and mix everything together with a large spoon. Once your carrots are coated with all the sweet goodness add them to your favorite blender. Blend until smooth. Next add your mixture to a buttered baking dish. Long dish (13×9) instead of short (8×8) is our preference so that the carrot fluff won’t be too thick but it’s up to you! Bake in the oven at 350 degrees for about 35 mins. You will know that it’s done when it is firm and slightly brown on the top. Let it cool down before cutting and serve by itself, with ice cream or whip cream! Enjoy!!
