This smoked sweet potato recipe came out of my curiosity for the flavors. I am a big fan of sweet potatoes roasted on an open fire, so I thought this would definitely work. Smoking the sweet potatoes before definitely gave it a bit of smokiness inside the pie. Reducing the amount of sugar as well really set it off. Smoked Sweet potato pie
1¼ cup mashed sweet potatoes (smoked)
½ cup salted butter
½ cup brown sugar
1 cup condensed milk
2 large eggs
1 tsp vanilla extract
1 tbsp pumpkin pie spice
1 tbsp flour
Deep 9″ pie crust
Instructions
Smoke the sweet potatoes at 275° for 2 hrs or until fork tender.
Raise smoker temp to 350 degrees.
Place sweet potato and butter in a mixing bowl and use an electric mixer to beat until smooth.
Add brown sugar, milk, eggs, vanilla extract, pumpkin pie spice and flour. Beat until smooth.
Pour into pie crust and bake in the smoker for 50-55 minutes.
