From the minute a kind American family took me in one November, as a teen, as I was alone for the holidays during my first year at boarding school in USA, and invited me over to their home, the American Thanksgiving had me under a spell. The American Thanksgiving celebration gathers family and friends around the table, similar to Lunar New Year for Chinese. A traditional feast is cooked with love and quality ingredients. The United States is known for its abundant and sustainable agricultural resources. I’d like to share three authentic recipes with some delicious in-season U.S. ingredients. Happy Thanksgiving!
U.S. (with a flag icon) Thanksgiving Cornish Hen (chicken emoji)
– U.S. Cornish hen (1kg each), trimmed of excess fat & thoroughly patted
– stuffing the chicken 1/2 garlic head, rosemary, thyme
– savory herb oil (below)

– avocado oil or high smoke point oil of choice
– kosher salt & ground black pepper, to season
– 700-800 g baby potatoes or mini creamer potatoes
Savory Herb Oil
– 6 tbs Worcestershire sauce
– 3 tbs Olive oil
– 2 cloves garlic finely chopped or grated
– 2 tbs finely chopped fresh poultry herbs (fresh rosemary, sage, thyme)
Herb Butter
– 60g butter, softened to room temperature
– 3 tbs, finely chopped fresh poultry herbs (fresh rosemary, sage, thyme)
– salt & pepper, to season
Gravy
– 3 tbs flour
– 125 ml U.S. dry white wine
– 375 ml chicken stock or broth
– salt & pepper, to season

– 60 ml U.S. apple cider
– 60ml U.S. bourbon
– 1/2 freshly squeezed lemon juice
– 60ml U.S. ginger beer
– 1 cup ice
– apple slices and cinnamon stick for garnish

– 212g brown sugar
– 214g canola oil
– 3 eggs
– 1 can U.S. 100% pure pumpkin puree
– 360g all-purpose flour
– 1 tsp cinnamon
– 1 tsp nutmeg
– 2 tsp baking powder
– U.S. pecans
– caramel sauce to drizzle
