Ingredients:
5 lbs oxtail
Dry ingredients
1 Tbsp smoked paprika
1 Tbsp garlic powder
1 Tbsp rib rack spice rub
1 Tbsp all-purpose seasoning
1 Tbsp smoked peach rub
1 Tbsp brown sugar
Vegetables:
Chopped onions
Chopped carrots
Mince garlic
Chopped green pepper
Chopped red bell pepper
Chopped green onions
Cooking Instructions
Clean the oxtail with lemon water, and remove any excess fat. Add all the dry ingredients listed above to the oxtail, and gently rub the ingredients on each piece of oxtail.
Smoke oxtails with hickory wood chips and charcoal for 2 hours. Spray the oxtail with apple cider vinegar in water as the oxtail is being smoked, 1 Tbsp apple cider vinegar to 1 cup of water, this will help to maintain moisture and add flavor to the oxtail as it smokes. Add smoked oxtail to a pressure cooker, add 3 cups of water, and pressure cook for 47 minutes. Remove the oxtail from the pressure cooker. Add 1 tbsp vegetable oil to a medium cooking pot, add all the vegetables listed, cook vegetables for 2 minutes, pour all the liquid from the pressure cooker into pot, stir, and add oxtail. Cover the pot and cook for 2 hrs hours on medium heat. The oxtail should be tender, and easily fall off the bone. Add 1 can of butter beans 10 minutes before oxtail is fully cooked. Serve this with rice, rassta pasta, or any side dish of your choice. Enjoy! 😊
